Adjust rack to middle position and preheat the oven to 425 degrees. Line a #baking sheet{} with foil and lightly oil (or coat with nonstick cooking spray). Wash and dry produce. Halve, peel, and thinly slice @yellow onion{2%unit}; mince a few slices until you have 1 TBSP (2 TBSP for 4 servings).

Meanwhile, drizzle @flour tortillas{12%tortilla} with @olive oil{2%tbsp}; brush or rub to completely coat both sides. Place the tortillas on a clean work surface. TIP: Press the taquitos lightly—this helps them crisp uniformly and prevents the shells from unrolling. Bake on the middle rack until golden and crisp, ~{8-12%minutes}.

While those bake, finely dice @tomato{2%tomato} and mince any remaining onion. In a small bowl, combine tomatoes, onion, juice of half the lime, and a pinch of salt. In a separate bowl, mix @guacamole{8%tbsp}, @sour cream{6%tbsp}, a squeeze of lime juice, and season with salt and pepper. When ready, split the broth evenly between plates, and top with salsa, crema, @hot sauce{2%tsp}, and fresh lime wedges. Serve. (The beef is fully cooked when the inside reaches an internal temperature of 160°.)
